A Biodynamic Garden in New York City
Something exciting and unexpected is growing on old Pavilion Hill, in Staten Island.
Joe Scaravella of Enoteca Maria, along with a group of like-minded friends, is in the process of developing a biodynamic micro-farm, located on a terraced hillside, a few short blocks from his restaurant. Responding to that same inner drive that inspired him to open the Enoteca, Joe is striving to bring his food to the next level.
Biodynamic farming results in produce that is superior even to organic produce and is the next wave in the development of a green, self sustaining environment. By growing produce nearby he is strengthening his ties to the source of the food, allowing him to have a hands-on approach. The biodynamic process connects the plant to the earth and takes the balance of nature into consideration. Just as in the restaurant, Joe has created an intimate and authentic experience; he hopes to achieve the same, introducing beauty, intensity and quality, in his produce.
